Quarantine Life: Day 7, AIP Creamy Mushroom Chicken

What goes better with self-isolation than comfort food? Today we’re sharing the recipe to one of our favorite meals, the Creamy Instant Pot Mushroom Chicken by Autoimmune Wellness. As I mentioned, Grant and I are following the autoimmune protocol (AIP) diet, which has been an interesting challenge in quarantine. We turned to the Autoimmune Wellness website for inspiration when we were craving a warm and hearty meal.

What I love about this recipe is that it’s so easy. It’s mostly assembly work and the Instant Pot does the rest. Three modifications I made to the original recipe:

  1. I added 1/3 cup of bone broth so it would be a little more like chicken soup.

  2. I added a few tablespoons of coconut amino because I like that bolder soy sauce taste.

  3. When the chicken was done cooking, I fished the pieces out of the pot with a slotted spoon and dropped them into my Kitchen Aid mixer for shredding.
